• Agriculture
Farming, one of the department’s
main economic activities, has not stopped developing
over the years. Traditional breeding dominated for
a long time until mechanisation brought about an increase
in farm size, a decrease in the number of farms and
desertion of highland “burons”.
Rural tourist facilities
have significantly developed to allow diversification
and afford farmers new sources of income. This is
clearly reflected in the implementation of a variety
of structures: bed & breakfast accommodation,
holiday gîtes, farm-based camp sites, educational
farms, etc.
Cantalien agriculture
is also adapting to new consumer trends with a substantial
increase in the quality approach such as AOC (Appellations
d’Origine Contrôlée), a label of
origin guaranteeing quality cheese and meat for consumers.

Different races of cow
are represented on the massif, without a doubt the
most emblematic of which is, the red Salers - an integral
part of the past and the Cantalien Massif landscape
- bearing the name of the famous Cantalien medieval
town. Other races include the Aubrac, Monbéliarde
or Holstein.
